What does it mean to eat like a local? For me, it’s literally where I ate while I was living in Madrid.

Overall
Everyone has a snooty opinion on what it means to ‘eat like a local.’ Some recommendations are good and some are not so good (see Don’t Take All Advice: Meh Restaurants in Madrid & Pho Madrid: No Me Gusta).
Don’t make it complicated. Eat and enjoy.
‘Eat as a local in Madrid’ and you eat pizzas, burgers and tacos… evidently not a local, and not having a flipping clue
So you skipped the posts on tapas, upscale Spanish food, and happy hour doble. Learn how to read first then be outraged later. ‘JD’, how appropriate.
Also, all those non Spanish restaurants must be there only for tourists. Surely, no one who lives in Spain eats anything but Spanish food.
But do share your experience as an expat across the globe.

I like the variety on your list. I’ve tried pizza in many countries and the local variations can be very interesting!
L’Autre in London (Mayfair) is a Polish-Mexican fusion restaurant that is definitely a locals place (since the 1970s!) for when people get tired of fish & chips.
Wherever locals eat IS a “locals place” whatever the cuisine!
